Another Victory!

I must have written this post way too early in the morning because I somehow forgot to give any credit to the one who inspired this recipe. Cecily (remember, the one who doesn't update her blog nearly as much as she should =) anyways... Cecily graciously offered me her world famous recipe for this Victory of mine. My sincerest apologies for not giving credit where credit is due. So, in grand Throckmorton family style, I forever dub this recipe:

"Cecily's Cream Cheese and Spinach Stuffed Chicken"
(or Cecily's Chicken for short)

There is a bit of common role reversal in the Throckmorton household. Many a night you will find Bryan in the kitchen preparing dinner for the 2 of us. As much as I desire to be the wife who cooks meals that my husband salivates over, I have yet to accomplish that goal. In fact, I am about as far away as possible. Almost any of my friends would agree that I am not known for my cooking abilities, to say the least.
Bryan and Jackie could give you more than enough stories if you don't believe me...

However, I do practice (when Bryan lets me, err when Bryan is getting home late and has no way to stop me) and every once in a blue moon, I cook something not only edible, but delicious!

Bryan and I refer to these meals as my "Victories".

I now successfully have 3 on the list!

(Nope that wasn't a typo - over a full year of marriage and only 3 "victory" meals...seriously, I told you I wasn't a good cook - did you not believe me?)

Here is what we like to call:

"Victory # 3"
Cream Cheese & Spinach Stuffed Chicken Breast

Ingredients:
4 large chicken breasts
1/2 cup mozzarella cheese (I used provolone and it tasted wonderful)
1/4 cup grated parmesan cheese
4oz cream cheese (I will use more next time for a thicker filling)
10oz strained spinach
1 egg
14 Ritz crackers
1 can of your favorite spaghetti sauce


Directions:
1) Preheat oven to 375
2) Slice a pocket in the 4 chickens
3) Mix mozzarella, parmesan, cream cheese
, and spinach in mixing bowl
4) Don't use such a large bowl that when you use your mixer you end up spitting the green mess all over the walls, cabinets, floors, and self. (see below)

5) beat egg in a bowl
6) Crumble crackers in a bowl
7) dip chicken breast into egg
8) Fill chicken pockets with cheese and spinach mixture
*If anyone has tips for stuffing chicken breasts so the filling just doesn't fall right back out please help a sister out
9) dip the stuffed chicken into the ritz crackers (yes this gets messy)
10) Place chickens in a casserole dish and cover with spaghetti sauce and top with more parmesan cheese
11) Bake for 40-60 minutes (depends on how thick your chickens are)
12) Serve with your favorite veggies or even over some penne pasta noodles and ENJOY!


Now children, Miss Kendahl Homemaker is off to darn her socks and spot clean the bathroom with a toothbrush...y'all have a glorious day =)

  2. I am so proud! Travis and I are the same way. He is an amazing cook but I VERY rarely attempt anything..and when I do cook it's such a big ordeal b/c I have to figure out what the heck I'm doing. While Travis can just whip things up out of nowhere. Your victory has inspired me though...Oh and have you seen the movie Julie and Julia? That is really inspirational! I now have the false hope that I too can transform from someone who has no clue how to cook into an amazing talented chef! haha it's a great movie..

  4. I'm pretty sure I only have 1 victory meal. haha. So you're doing better than me :) And what's even more sad is that I don't remember what that 1 victory is...must have not been such a great victory. :( I'll try this recipe and see if I can add it to my list :)
